Encompassing five restaurants (Butchery & Wine, Rozbrat 20, Kieliszki Na Hożej, Kieliszki Na Próżnej and Brasserie Warszawska) and a wine import business, no F&B group has shown quite such vision as Ferment. De-formalizing the dining experience whilst placing wine at the core of their offer, it’s Ferment that can be credited with shepherding the city away from stiff fine dining haunts and into surroundings more casual. Popularizing the neo-bistro format whilst showcasing the best Polish produce, each venue in their portfolio has played its own little part in the city’s gastro revolution; taken together, these have transformed the city. Innovative in their outlook and fresh in their approach, it is a group that has come to be recognized as a benchmark for quality: theirs is a standard that all others seek to follow.
